christmas eve {!}

every christmas eve jaz is allowed to open one specific present. this includes new jammies, a movie, snacks, a mug or water bottle and hot chocolate. the jim jams she is wearing in this picture are the ones we got her last year. we’ve done this tradition since she was teeny and it’s not one we are going to do away with!

another tradition is making cookies…however we strayed from the cookie part and made mini cheesecakes instead!

believe it or not but jaz stayed in bed till 8:30! well…technically she snuck into our bed around 7:00 and fell back to sleep. hallelu! after we all woke up it was presents time! but first, coffee! and yes lulu has a sweater on, there’s a reason she hates me but i just can’t put my finger on why…

this christmas we decided to stay home and start our own family tradition. so, i had to figure what i was going to make for our early supper…ham it was! jazmyne requested asparagus and cale {of course} wanted homemade mashed taters and crescent rolls. i was very satisfied with how everything turned out and i loved just being with my little family.

after supper, cale napped while jaz and i got ready to head to cale’s brother’s house for drinks and desserts. they are expecting a little one in the next few months and we are so excited to meet him!

still so excited that cale and jaz got me a pimpin joy baseball tee! if you’re from texas then you know all about the bobby bones show and i have been an avid listener since 7th grade {whoa}! pimpin joy is something amy’s {co-host} mom started while she was battling cancer and they turned it to the most amazing charity ever. i love love love love this!!!

we are in the midst of re-doing our living room and entry way and this gargantuan was taking up too much space and ruining my space awareness and ideas! time to come down you gorgeous beaut!

along with the tree came down all of our other christmas decor…cale was so bummed so i left out a few snowmen so he wouldn’t be so blue… haha! but this is what we did most of the day besides lounging around and playing the game of life. i forgot how fun that game was!

coffee and seahawks! we went to our friends’ house to watch the game that we thought we had in the bag…lol…nope. no idea where our o-line was because they definitely were not on the field. grrrr such a frustrating game!

this was one of our best christmas’ yet! i am so happy that we had jaz this year and that we got to start our own little tradition.

a tasty series : mozzarella stuffed meatballs

welcome back to our husband and wife blog series!

today’s review and recipe is…

mozzarella stuffed meatballs!

anything that has cheese, you can count cale in!
so this recipe is all cale’s and jaz’s masterpiece!

what you’ll need:
1 lb of hot italian sausage
1 lb of lean ground beef
1 pkg of fresh mozzerella
2 jars of your choice of marinara
1 bunch of parsley
1/2 tsp garlic powder
1 cup bread crumbs
1/4 cup parmesan cheese
2 eggs
1/2 cup whole milk

step 1 } mix everythang minus the cheese and marinara sauce.

step 2 } roll a good size amount of meat into a tight ball.

step 3 } cut your mozzarella cheese into cubes about this big.

step 4 } stuff the cheese cube directly into the center of your rolled meatball.

then roll it back into a ball, completely covering the cheese.

step 5 } cover the bottom of your crock pot with marinara, add a layer of meatballs on top, then cover with another layer of sauce. Do so until you have used all your meatballs and sauce. cover and cook on high for 2 -2 1/2 hours.

step 6 } go tell the minion to wash her filthy hands.

and there you have it! a delicious cheese stuffed meatball!

cale & i loved them, jaz however thought they were a little too spicy. but all in all…delicious!

i had carpool duty which means i had some extra time in the morning and jaz requested chorizo & egg tacos. so i made her one….and 10 more to bring to work and surprise my fellow co-workers that had to suffer with me on this friday.
just call me santa. 😉

cale and his brother hit the slopes! ugh, i was am so jealous! i have never been skiing or snowboarding so i am super excited to finally get to go!

after work i had dinner with a friend and then headed to shane co to pick up this beaut. because i added 2 extra bands for the wedding, it got incredibly tight so i needed to let it out 1/4 out and then i got the bands spaced out. i’m obsessed with this thing.

WHAAAAA!!! when i got home jaz and cale were watching hey arnold, then we watched doug, AND THEN we watched rugrats!!!
cale & i felt like we were back in the 90’s, it was awesome!

i had to make a run to the grocery store for some ingredients for cookies and i was oh so lucky to sit in this ridiculous line at our favorite coffee place.

i was in the kitchen all day because of these things. don’t worry the recipe for the apple pie cookies will be up soon! and the brownie christmas trees are just that…brownies lol. with some cookie frosting drizzled on top.

i was invited by my sweet co-worker, now a good friend, to her annual christmas cookie exchange! look at all these cookies! everyone had to bake their own and wear their favorite x-mas pjs. then once we ooo’d and ahh’d over them we made our own take home plates. such a great get-together and one i am so grateful that i was a part of this year.

woke up and watched the hawks CRUSH the ravens… i’ve said that two weeks in a row…i think they finally have that fire lit beneath their asses! playoffs are soooooo close!!!

sorry this is so late but i just have to say one thing…

i have the bestest best friend and an amazing husband!

cale was being so weird all week and not allowing me to make any plans for the weekend. but he wouldn’t tell me why and it was killing me! i hate surprises so he was extra excited because he knew how much it was eating me up!
he told me to go pick up jaz per the usual after work schedule and when we got home….
MY BEST FUCKING FRIEND WAS SITTING ON MY COUCH!
{sorry for the profanity but it was necessary}
she lives in texas so this is a huge deal…like…i died. {watch the video cale took here}
these turds have been planning this since the beginning of november! NOVEMBER!! ugh, what poops!

one of preslee’s favorite brunch spots in seattle is portage bay, we actually were able to try out their new location.

after brunch we went and got our nails done and this is what we walked into when we got home. someone found their old legos! him & jaz were having a ball!

last christmas, as one of my stocking stuffers, cale bought me a painting with a twist voucher for 2 and we just didn’t have the time to use it and i completely forgot about it…turns out he and pres schemed and set this up. so excited!

after painting we headed to a dive bar just down the street from my  house and had the best time!
• broke the pool table
• ate an entire order of garlic fries
• taught a girl how to two step
• got spun around the dance floor by some random cowboys…then dropped. yes he dropped me haha
• met the most hysterical woman ever who couldn’t stop singing ‘bitch betta have my money!’

no pictures to be had this day. lots of tv {watched the hawks CRUSH the vikings…yesssssss!}, some borracho beans and the couch. which is what we usually did when we lived together in texas so it was just like old times and that’s what i miss the most.

even though it was a short visit i still had such a great time with my person. it sucks that we live so far apart and that we don’t get to see each other often but when we do it’s like no time has passed at all.
even though this weekend was all about me and my best friend, i still am so very grateful for my wonderful husband. he planned schemed with preslee for so long and didn’t slip once. and then he volunteered to be the permanent babysitter all weekend.

it was a fantastic weekend and a surprise that i will never forget.

a tasty series : cheeseburger cups

WELCOME BACK TO BLOG DIABEETUS!
aka – our first husband and wife blog series!

today’s recipe trial and review is…

cheeseburger cups

yes, that is right, mother-fluffin cheeseburger cups!

what you’ll need:
refrigerated biscuits
1 pound of either ground beef or turkey (i always cook with turkey so that’s what i used)
1/2 cup ketchup
1 tsp worcestershire
1 tbsp mustard
2 tbsp brown sugar
small slices of your choice of cheese
a variety of toppings…you choose! we chose tomatoes, pickles, onions and avocado

let’s do this!

preheat your oven to 400°

step 1 }  brown your meat, mine will look a little different because i used turkey.
step 2 }  once browned, add the ketchup, mustard, worcestershire and brown sugar.

step 3 }  take your biscuit and flatten it out in your palm first then stick it in the cupcake pan, making sure to create a little bowl for the meat.

step 4 }  now add your meat, you can be generous!
step 5 }  pop these into your preheated oven for about 10 minutes or until your biscuits look golden brown

step 6 }  add your cheese and pop em’ back in for another 3 or 4 minutes

step 7 }  in the meantime, cut up your toppings! try not to eat as many pickles as i did, eek!
